I was craving tacos (what else is new) so I decided to make chicken chile lime tacos:

dice up some raw chicken โ€ข add a small amount of EVOO โ€ข juice of 1/2 lemon โ€ข enough chile lime seasoning blend to coat chicken โ€ข put all ingredients intoย aย ziploc bag & shake to evenly coat โ€ข cook chicken over medium heat until browned. ๐ŸŒถ๐Ÿ‹๐Ÿ“
For the sauce, I made a healthier guac dip โ€” 2 parts avo to 1 part nonfat plain GY + fresh pico de gallo + garlic powder + pepper โ€ข mix well & keep refrigerated. ๐Ÿ…
PS โ€” the chile lime seasoning blend has salt in itโ€ฆ just an FYI so you donโ€™t need to add any salt to this meal. ๐Ÿ‘๐Ÿผ

Crockpot Chicken Burrito

— 1 lb. boneless, skinless chicken โ€” trim excess fat
— 4 c. chicken broth (low sodium)
— 2 vine ripened tomatoes, diced
— 8 oz. salsa (alberstons ready-to-eat pico de gallo)
— 2 T. EVOO
— 2 t. (each) cumin, garlic powder, & chili powder
1. Place all ingredients in crockpot
2. Cook for 2 hours on high heat
3. Pullout chicken to shred it & place it back in
Add:
— 1 can (14oz.) black beans no salt added (drain/rinse)
— 1 3/4 c. brown rice
— 1 c. tricolor quinoa
4. Cook for another 2 hours of 4 hours on low heat (depending on when you want to eat!)
Toppings (optional)
— green onion
— cheese
— avocado — plain Greek yogurt
Serve alone, on a tortilla, or a bed of lettuce! ๐Ÿ˜‹
