Over-Night Oats

the-spoonful-of-health-over-night-oatsA busy morning calls for planning ahead & making over-night [chai + almond] oats ๐ŸŒ// No sugar added, still so tasty! ๐Ÿ˜‹

To make:
1/2 c rolled oats
2 T ancient seed mix (Trader Joe’s)
1/2 T chia seeds
1 c almond milk, unsweetened vanilla (New Barn)
1/2 T chai tea mix (TJ’s – orange round tin container)
Sprinkle of cinnamon โœจ

Place all ingredients in a small mason jar โ€ข shake well to mix โ€ข refrigerate for at least 8 hours (get your ๐Ÿ’ค) โ€ข top with crushed slivered almonds + banana slices โ€ข enjoy!

Good morning, friends! โ˜€๏ธ ๐Ÿ™Œ๐Ÿผ ๐Ÿ’ฅ I am obsessed with these [sun]day oats. ๐ŸŒž๐Ÿ

To Make:

Use 1 packet of BetterOats (bare) + 1/2 t. ground cinnamon + hot water.

Next, stir in 1 T. almond butter (whole foods) โ€ข top with 1/2 peach + 1 yellow kiwi + fresh pineapple slices + tiny finger grab of sliced almonds, crunched. ๐Ÿ˜‹๐Ÿ‘Œ๐Ÿผ

Potato Omelette

Not your average Potato Omelette for today’s brunch on this lovely Saturday! ๐Ÿณย 

Inspiration from the greatย @rachaelsgoodeats [obvi]ย 

 

To make omelette:
Use small skillet sprayed with oil of choice (I used olive oil) โ€ข set burner to medium heat โ€ข place a handful of leftover roasted red potatoes (smash at bottom of skillet using a fork or potato masher) โ€ข cook for about one minute โ€ข top with egg whites (about 1/4 cup of egg whites or 3 eggs) โ€ข sprinkle chopped scallions on top โ€ข let omelette cook on medium for a few minutes โ€ข place the skillet into the oven (set to broil) for about 5 mins to evenly cook the top! โ€ข finish with ground black pepper & 1/3 avocado ๐Ÿ˜‹

Not your average [American] oats ๐Ÿ™Œ๐Ÿผ ๐Ÿ˜‹ // How did I not think to add GY (greek yogurt) to my oats for some extra protein & creaminess until today?! // Also, unplanned red, white & blue American theme going on here, but perfect way to start flag day! ๐Ÿ˜ ๐Ÿ‡บ๐Ÿ‡ธ ๐Ÿ‘๐Ÿผ

  • 1/4 cup ancient grains oatmeal from TJ’s (the best oats)
  • 1 T. Fresh almond butter (whole foods — freshly ground in produce section)
  • 1 splash of nonfat (0%) milk
  • 1 t. ground cinnamon
  • 1 small spoonful of nonfat plain Greek yogurt
  • 4 fresh cherries (pitted) + blueberries + sliced almonds

Directions โ€” place oats in a bowl โ€ข add cinnamon โ€ข add splash of H2O โ€ข mix in AB โ€ข add GY and milk โ€ข stir until even consistency โ€ข microwave for ~30ish sec โ€ข top with fruit + nuts! ๐Ÿ˜Œ

Breakfast tacos ๐Ÿณ๐Ÿ™Œ๐Ÿผ๐ŸŒฎ

by far my favorite breakfast โ€” very quick & delicious! ๐Ÿ˜Œ

Spray small pan with nonstick oil (I use canola oil)

pour 1/2 cup 100% egg whites (or ~4 egg whites) into panย 

place on medium to high heat and let cook

heat 2 small corn tortillas over open flame, constantly flipping with tongs then set aside when warm

flip egg whites over with spatula making sure each side is thoroughly cooked (slightly brown spots) & turn off heat

thinly slice cheese using a cheese cutter (I like natural colby jack) & place on corn tortillas

add a small amount of sriracha sauce & evenly place egg whites on top of tortillas

fold up & enjoy these yummy eggwhite tacos! ๐Ÿ˜Š

Add some fresh fruit on the side for a complete & perfect b-fast! ๐Ÿ™‚ ๐Ÿ“

Ps – did you know Norwegians invented the cheese cutter?! ๐Ÿ‡ณ๐Ÿ‡ด ๐Ÿ™Œ๐Ÿผ
